Teknologi pangan merupakan salah satu pilar utama dalam sistem pangan modern yang berperan menjembatani ilmu dasar pangan dengan penerapannya dalam kehidupan sehari-hari. Perkembangan jumlah penduduk, perubahan pola konsumsi, serta meningkatnya tuntutan terhadap keamanan, mutu, dan nilai gizi pangan mendorong perlunya penguasaan konsep teknologi pangan secara komprehensif. Melalui pendekatan ilmiah dan rekayasa, teknologi pangan tidak hanya berfokus pada pengolahan, tetapi juga mencakup penanganan bahan baku, pengawetan, pengemasan, distribusi, hingga pengawasan mutu pangan. Oleh karena itu, pemahaman awal mengenai konsep dasar teknologi pangan menjadi fondasi penting bagi mahasiswa untuk memahami mata kuliah lanjutan di bidang pangan dan gizi masyarakat. Teknologi pangan adalah cabang ilmu terapan yang mempelajari prinsip-prinsip ilmiah dan teknik rekayasa dalam pengolahan, pengawetan, penyimpanan, pengemasan, dan distribusi pangan dengan tujuan menghasilkan pangan yang aman, bermutu, bergizi, dan layak konsumsi. Ilmu ini memadukan berbagai disiplin, seperti kimia pangan, mikrobiologi pangan, teknik proses, sanitasi, serta ilmu gizi, sehingga mampu menjawab tantangan penyediaan pangan bagi masyarakat secara berkelanjutan. Dalam konteks kesehatan masyarakat, teknologi pangan berperan penting dalam memastikan pangan yang dikonsumsi tidak hanya mencukupi secara kuantitas, tetapi juga berkualitas dan mendukung status gizi optimal.<\/p>\n
